High capacity, fast freezing (e.g., Emery Thompson, Carpigiani)
Increases final volume by this percentage.
Add ingredients to scale batch size.
Colder display cases require a higher PAC to remain scoopable. A standard artisanal gelato case is typically around -14°C.
Deterministically solve Milk, Cream, SMP, and Sugar to hit your target composition (Italian Gelato).
The solver balances physical Fat, MSNF, and Sugar mass fractions. Anti-Freezing Power (PAC) is an unconstrained output. Check the PAC score in Mix Analytics to verify scoopability at your serving temperature (-18°C vs -12°C), and swap a portion of sucrose for dextrose or honey if needed.
Deterministically balance your active recipe by only adding to existing ingredients (Italian Gelato). The batch weight will expand naturally to achieve exact balance.
Add your ingredients to the Recipe Builder above, or use the Auto-Balancer tab to generate a balanced base from scratch.

What is Recipe Balancing?
The food science and thermodynamics behind perfect frozen desserts.
Anti-Freezing Power (PAC)
PAC (Potere Anti-Congelante) measures freezing point depression relative to sucrose. At typical dipping temperatures (-11°C to -18°C), PAC dictates the exact ratio of liquid syrup to frozen ice. Proper PAC keeps your ice cream soft and scoopable rather than rock-hard or soupy.
Sweetening Power (POD)
POD (Potere Dolcificante) gauges perceived sweetness against sucrose (100 POD). Because different sugars affect freezing point and sweetness independently, balancing allows you to adjust firmness without making the mix overly sweet.
Total Solids & Free Water
Frozen desserts are emulsions of water held in place by dissolved sugars and suspended solids. Maintaining 36%–42% total solids binds free water, preventing ice crystals from growing coarse while delivering rich body and a smooth, clean melt.
Fat & Serum Solids (MSNF)
Butterfat provides mouthfeel and carries aroma, while Milk Solids Non-Fat (MSNF) supply proteins that stabilize the emulsion and air cells (overrun). Careful balancing prevents sandiness from excess lactose crystallization while ensuring structural stability.
Why Balance Your Mix?
Eliminate kitchen guesswork, cut batch waste, and deliver unmatched scoop quality.
Ideal Scoopability
Ensure scoops release cleanly and glide smoothly from the spade at your cabinet's exact display temperature, whether serving gelato at -12°C or hard scoop at -16°C.
Thermal Resistance
Dipping cabinets constantly encounter ambient air when lids open. Controlled solids and PAC minimize recrystallization, keeping textures silky over the entire tub lifespan.
Freedom for Flavors
Add real fruit purées, single-origin chocolate, nut butters, or spirits with total confidence. Balance their inherent sugars and water so every unique flavor churns uniformly.
Batch Reproducibility
Eliminate expensive trial-and-error and dumped batches. Formulate in test quantities, then scale straight to commercial production knowing the chemistry and yield will match perfectly.
